Green is in the center of all colours. It is not too light or pink or too dark or brown. This means that the colour green is the easiest for brain to quickly process.
At 80-100 km/h, you have just a second or two to read a sign. The white on green is the easiest and quickest readability.
In fact, a survey was conducted on a real highway in the late 1950s which tested various coloured signs. Green signs with white letters were seen by over half of the drivers and were the easiest to read.
2. Green Does Not Create Panic or Distraction
Consider a red colour; what does it mean? Stop. Danger. Emergency. Your brain would be alarmed every time you saw a sign on the highway if it were red. At high speed this can be dangerous.
Green is a peaceful colour. Nothing happens in your brain to make you feel like you need to respond. It just states, "Some useful information. This helps to keep drivers at ease and on the road.
It has also been demonstrated that green is associated with decreasing stress levels. The mere presence of green can actually help to reduce the heartbeat. A driver who is not in a hurry on a fast highway is a safe driver.
3. Green Blends With the Surroundings But Still Stands Out
The highways run through fields, forests, hills and open spaces. This natural environment consists mainly of green/brown.
Here's a fun fact. Though green is a colour that is considered to blend in with nature, a bright green board with white bold letters is extremely easy to see when contrasted with a sky or a road background. It doesn't stand out in a bad way, it's not too flashy.

4. Green Signs Are Clearly Visible at Night
Night driving on the highway is prevalent in India. Green signs have a special reflective coating on them. The light reflects back as soon as your car's light comes into contact with the sign. This is referred to as "retroreflectivity".
The dark background and contrast between the white letters and the green background are striking. These signs can and should be read a distance away and allow adequate time for the driver to make the necessary preparations for the turn or exit.
Red and blue signs are less easily read at night at higher highway speeds due to differing light reflectivity and the less robust contrast.

4. White Colour: It is too bright and causes glare – particularly at night.
